This Riesling Winzersekt Brut from the 2022 vintage is a real treat.
Whether for a toast at celebrations or just to drink – you can’t go wrong with it!
This sparkling wine from our vineyards in Cochem on the Moselle was produced using the traditional method.
This is also known as the Champenoise method or classic bottle fermentation.
In this method, the base wine is fermented in normal tanks until it is completely dry, i.e. no fermentable sugar remains.
This is then filled into the individual sparkling wine bottles together with a little sugar and yeast.
This is necessary so that a second fermentation can take place in the bottle, i.e. so that the yeast then converts the sugar into alcohol and CO2.
As the sparkling wine bottles are sealed airtight, the CO2 cannot escape and therefore remains in the sparkling wine as “bubbles”.
Only German sparkling wine produced using this process may be called Winzersekt.
The sparkling wine may be disgorged after 9 months at the earliest, which means that the yeast is removed from the bottle.
Otherwise the sparkling wine would be cloudy and who wants that?
After disgorging, the dosage is added in our case.
This means that a small amount of sulphur is added for preservation and a little sugar for flavor.
As our Riesling Winzersekt is Brut, this means that the sugar content of the sparkling wine is similar to that of a dry wine.
