The Cochemer Bischofsstuhl Spätlese is a classic and authentic Moselle wine.
As a result, it is characterized by an elegant balance of sweetness and delicate acidity, which is typical of high-quality, sweet Moselle wines.
This is exactly what we want to achieve as a Cochem winery!
This Riesling Spätlese shows the delicate aroma of tropical fruits, such as pineapple and grapefruit, as well as a hint of currant and mint.
This is due to the fact that this white wine grows in our monopoly vineyard Cochemer Bischofsstuhl.
This special vineyard in Cochem is characterized by a cool microclimate, allowing the grapes to ripen slowly but thoroughly.
This allows them to develop an intense aroma.
This also creates a particularly exciting interplay between sweetness and acidity.
For us as winegrowers, we are particularly proud of this Riesling, as it represents all our craftsmanship.
Spätlese wines are classified as Prädikat wines, just like Kabinett wines and Auslese wines.
This means that these wines must not be fortified, i.e. they must be particularly mature.
This also gives rise to the name Spätlese – late harvest, which is why the grapes can ripen for longer.
Spätlese wines can generally be produced from different grape varieties.
However, we personally find that Riesling Spätlese wines from the steep slopes of the Moselle are the most elegant.
Our 2023 Cochemer Bischofsstuhl Spätlese therefore grows on a steep slope on blue and red slate soil.
As a result, the sweet white wine has a particularly fine minerality, which gives it great complexity.
This vineyard in Cochem is 100% handmade, which is why we know every plant inside out and can give it the right care.
